Ecuadorian by birth and quintessentially NYC by trade and current residence, Humberto is a high level hero of ingredient driven menus that exemplify the current culinary scene. His branded regional Ecuadorian-French food is composed of the rich and varied ingredients from one of the world’s most dynamic culinary capitals.
Humberto has worked and perfected his craft alongside many of New York’s most famous chefs including Mario Batali, Marco Moreira, Larry Forgione, Marcus Samuelson, and Rocco Dispirito. He has kept his knowledge base and skill set razor shop by working as a Stagiaire in some of the world’s finest kitchens- Alinea (Chicago), Per Se (NY), Eleven Madison (NY), and Guy Savoy (Las Vegas).
